I have fought Gilgam where I just let him hit me while I heal and detaunt. The thing about Bal is, zealot has so many absorbs so if you know to look for bal the end tick does nothing most of the time, since it just gets absorbed.
Builds like Gilgams snb ib are just stalemate where neither kills anything. Hence I really hate snb builds because its almost always stalemate or the guy who is not playing snb just leaves the fight creating boring gameplay..
I think he runs different builds, the one with full offence which he uses in the Arena from what i can tell is deadly imho and will kill things. they recently buffed IB to have that 50% heal debuff up without a cd as well.
When it comes to wh vs for example my zeal, pretty much the only way for them to win the fight is to kill in opener but in most cases you just counter that with detaunt/embrace and pots. After that its pretty much won duel for zl.
WL is (to me) the most interesting duel but I havent played the reworked zeal nearly enough to say how the fight would go nowadays, but before wl was 100% the class that gave me the hardest time. (Not counting dps am here because back then you would just stagger the am and leave the fight). Nowadays you can fight dps am which I like alot. Pretty much the only classes/specs I dont bother fighting is regen snb tanks xD
