Oh man the most fun I ever had was a duo with a SW named Raclos while I was on my KotBS.
Of course that was on live, and the Knight isn't what it used to be. Also Rac kind of just combo'd with himself tbh I don't even know why I was there so often

People don't like DPS DoKs because they want to be able to charge in and face roll while you sit back and spam AE heals.

IB/Engi is indeed a mighty fine combo.
If you put the engie on tinkerer and keg the buffs from the IB helps a lot. Especially the Willpower +240 buff nearly doubles the keg healoutput.

Disrupt/dodge in the +50%s (DD,Flameturret [+65%s with HtL])
Parry in the +42%s (OB,R)
That level of avoidance allows Engis to opt for all other kinds of fancy stuff, with alot of opportuntiy to utilize the diffrent tome jewelry sets to further max out avoidance based on the engagements or go more glassy.
I'd personally suggest the IB (every tank, in every setup really) to have a shield in his bag 24/7 to be able to quickly swap to it based on the engagements, too.
Especially if theres an opportunity to bait pugs into some confined areas to make full use of the flameturret(+HtL) [and other tinkerer shenanigans] to completly shutdown rdps - yet again that might be a bit overkill, still, even a SnB IB can provide decent dps if need be.
Then add to the avoidance what you've stated above, aswell as:
apfeed (IB)
critbuff (IB)
toughnessbuff (IB)
armordebuffs (normal one and morale, IB)
corp resistance (IB)
ele resistance (Engi)
armorbuff (if you are low on pots; it should theoretically stack with FJ, IB)
kd (with shield; 10s cd, 2h; 20s, IB)
punt (10s cd, IB)
stagger (Engi)
naturally high armorlevels (AI on both, FJ on engi)
guard (IB, ofc)
(...<the list goes on for ages>...)
The only issue is probably spirit resistance, and that can be dealt with via tome jewelry sets aswell.

Myself and my buddy are playing shammy/magus, i tend to heal and hurt and he tends to leeroy aoe or we focus fire plenty and murder whatever we hit.
(This is in scenario's)
We figured i get a elemental aoe debuff/snare and have heals/shield and am heading towards full-on dps shammy. We stack dots and tip em over the edge
With the current exp mode i heal through path of da green and my magus friend survives plenty of kamikaze aoe tentacle swinging action (note i say plenty, not 'all'... magus really isnt a tank
)

Abbd.: Make sure you ask about stuff, for example what things stack and such, so you don't run into ugly situations and spend time dedicating your time to things that leave you at a disadvantage.
