Well hmmm recipe. The crust is yeast based using bread flour which is a little more expensive that typical bleached white flour but better. Pizza crust recipes are pretty easy to find just make sure it uses yeast. (I usually add 1/2 of a really ripe crushed banana to the recipe as well). The secret for the crispy crust is to make and then let it sit in the refrigerator (sealed tightly in a container) for about 5 days. Once you open that container and it smells like vodka, its ready. The older the dough, the more it will bake into "cracker" texture versus doughy bread. Roll it out into the shape and about 3/16" or 5mm thick. Put it into the greased iron skillet. Let it rise for maybe an hour. Check on it to make sure it isn't slumping down into the pan. After it rises a bit, you'll want to pre-bake the crust. I tried recently to fry it but it kept slumping down into the pan. I had better luck broiling close to the heat for a few minutes until it started to get slightly solid. Take it out and fill the pan with your favorite things and bake. The thicker the pizza the lower temp and longer you bake. Just don't burn the crust!
