For tanking I always wear winds and bl or one genesis (the one with block). The resists are high, you get a decent armour and ini bonus as well. For avoidance you have your rr points and htl/chm. More armour and resists help you to mitigate the damage that does go through your avoidance. Same goes for resists. More ini also helps you if you are low rr and can't invest much into fs or extra ini.

Thanks for the answers regarding jewelry.

So I was watching some old BO pvp video and I've noticed that right in da jibbles actually used to knock up the target in the air a bit while also interrupting the cast. What happened to that? Nerfed I assume? Can't find any info about it on the wiki or in the patch notes.

Yes that was removed. I don't know why personally. It was quite handy I guess, having 3 (punt, taunt, and kick in the nuts) interrupts.
