What exactly is the thought process behind literally bending the lore to make male sorcs a thing, but not including female versions of classes that would be lore friendly?
Was there some kind of investor meeting where they deemed having a male version of the sorc would increase sales or something?

There probably was. Just consider this: how many games where you control one specific character have a female-only player character versus games with a male-only player character? Whatever the actual case is, the industry cleary is under the impression gamers prefer their player characters male.

you're not looking at this through the eyes of gamings biggest demographic - adolescent boys
chosen and marauders are norsemen; enormously muscular, homicidal maniacs, covered in studs and spikes and tattoos and they're deadkilly and are just great. as destro on the front lines you'll be fighting alongside other enormously spiky tattoo'd maniacs (as well as plenty of waaagh) and well there's nothing that such a demographic loves more
male sorcs, whatever, another option for male wizards. doesn't effect much, male DE already exists, push it out
part of the adolescent boy left inside me wants things to stay this way

the request is not out of mind, fantasy khorne chosen is a woma (valkia).... i am for make anyone able to play their gender if background support it which is not the case of ork or which elf......
anyway male sorc should not exist (malekith kill /ban them all) so dont fuss about someone asking female chosen.

There's a neat discussion all the way back from 2009 about this design choice,
here.
Personally, I don't see a reason as to why we should slap gender identifications on Chosens. As the lore states, a Chaos Warrior that has been 'chosen' by the Chaos Gods undergo various transformations and mutations the stronger they grow. The Chosen is literally welded into their obtained Chaos armor after becoming powerful/mutated enough, up to the point where their previous human form is unrecognisable.
Now, there are female warcamp guards for the Raven Host's encampments, and since the Chaos faction is loosely based on Norse/Viking mythology and history, it makes sense that there are female fighters amongst the ranks. However, if they have been marked to become a Chosen of a Chaos god, it'll hardly matter what the true identity in their moral life was.
Oh also HammerWiki states the following on the issue;
While in the Warhammer World there are rare instances of female Chosen the game developers felt their artists could not design a female Chosen which looked intimidating enough. Hence in the Raven Host there are only male Chosen. Higher level Chosen are so thoroughly encased in Chaos armour (and their bodies underneath so horribly mutated) that it would be difficult to tell the difference between male and female if it even mattered. -

A female Dwarf's prime task in Dwarf society is that of a caretaker, housekeeper, provisioner and loving mother.
While they aren't prohibited from enlisting into the warrior's doctrine, they are heavily discouraged to do so. No Dwarf would allow their son to grow up an orphan and have their family legacy lost in the midst of family drama, and having their offspring renounced to the eventual fate of a Slayer.
And as Dwarfs consider both males and females to be equal, despite their obvious difference in primary task of their society, yes, they can also become Slayers.

But slayers can have offspring i think, at least the King of Karak Kadrin history is about that, how he is the last of a dinasty of slayer kings.
But whatever, we are discussing lore and not even GW knows what they want with it, retconing the previous edition lore was like releasing a new army book for them.
