Can someone explain to me Fort supplies and what exactly do I do?

I know it has something to do with the flags in the zone but other than that I am totally clueless

My understanding of it is that you take supplies from a flag that your faction holds, back to the keep. This in turn increases the ranking of the fort from 1 star, up to a maximum of 5 stars. When the fort is 2 stars, you can then buy a Ram from the Keep, this is what people usually aim for if they plan to siege the enemy keep.

If you get to 5 stars, you automatically lock that map down and take the enemy keep by default, though this can take hours and doesn't usually happen. If the enemy faction is trying to 5 star their keep, you can halt their progress by taking back the flags (battlefield objectives) that they hold, this can actually drop their keep from a 4 star down to 3 star.
