After playing around for a bit, I've narrowed down my two favorites to the 2h WP and 2h SM. My question is are either one of the classes more desirable by war bands etc?

The answer to that question is subject to various conditions:
1. Some warband leaders and/or members do not consider 2H SM to be a real tank. This is an archaic notion but still prevalent to some degree.
2. Some players operate under the belief in order to have one good WP in a warband you actually need two WP's in different specs which, of course, compliment each other.
3. Some players insist the days of 2H SM's being capable of decent DPS are over. Truthfully, there is some merit to this argument given the series of changes implemented against 2H SM play over time. However I still hold the belief 2H SM's can be effective DPS dealers, particularly in small scale play.
4. Some players will never be happy with anything you do regardless of how you do it or what manner of success you have.
5. Warrior Priest are not as much fun to play as DOKs. This is true, just as Choppas being ugly is true, and Witch Elves being fun at picnics isn't.
6. No matter what you play, someone will complain about it. This is true, just as Witch Hunters being self-righteous is true, and playing in The Blob isn't.
7. If I had to proclaim a restricted answer to your question, WP's are probably more desired because every now and then they can heal. But then SM's can heal themselves, so...
8. Under the spirit of 'play the class you most enjoy and ignore the heretics,' my advice is play a 2H SM. It is, to this day, still the most fun class in the most fun spec the game has to offer. It isn't God-Mode like a Magus with their thousand-foot range purple beam of death, but it is challenging. Which offers a level of fun all its own.
9. Or say to hades with both of them and play a Witch Elf. But I digress.

Short answer: 2H SM.
Longer answer:
2H SM is in a good place imho, you can make it reasonable tanky and still have WODS( although nerfed). DPS is decent in warbands thanks to Phoenix wings/wrath of hoeth spam and you're stealing all those sweet stats for your team mates with natures blade.
If you don't need to spec WW, then sapping strike will further increase your AOE dps potential( + 10 crit).
In super organized play you may be forced into a SnB SM, but otherwise most warbands will take SM 2H since order in general has less tanks than Destro. Also as far as 2H tanks goes, SM is at the top. Decent dps, reasonably tanky.
For those sweetspot hours( NA) which imho is the most fun time in this game, SM 2H will have more impact for their faction since you can help leading the charge. You open up a path which then those WL's etc will assist on. WP can't do that.
For WP you will carry a stigma as dps, most want you as Salvation healer since it is the best spec. In scenarios you will be blamed if there are no healers etc by that random toxic person. I would rather be a dps AM if had to play healer as dps in that context.
In Solo 2H SM is more effective.
I did an honest attempt to play 2H WP solo, it's just not effective since every rdps will kite you. No gap closer on a melee class is a death sentence in solo. You may play it duo in smalll scale( have a guard tank ).
