so many questions 
to your first question about the health bar.
- type /pure
- go to "player"
- move both sliders "Unit Frame Alpha" and "Unit Frame Font Alpha" up to 1.
- Apply.
- now you can move the player healthbar in the Layout Editor. (esc > user settings > interface)
For the menu thingy:
- just open the Layout Editor and make it bigger by resizeing it.
For the Morale Bar stuff:

I had been in /pure before, pushing the sliders didn't solve it, but I just started derping with the buttons until I got something visible on screen, then tweaked from there. the techie solution  
  
The menu: can't; it's part of the Warboard. I can have the different things swap places, but I can't seem to increase the size of the standard menu icons. (character, abilities, backpack, etc)  
And I'll have to look into the morale bar.  
  
I'm on Linux btw, and on 3440 x 1440, and apart from changing the position of nearly every window, it does work well!
