I think that tanks should have a valid off-spec (Both for PvP and PvE). So that you can 2H and still be usefull.

For example don't understand why 2H tanks are not better as a can opener (counter to regular tanks?) could bring a nice dynamic to the game.

If the consistency is what you are after, you might try to launch the game via Steam instead of Lutris, might help your case

Honestly I think that there are a lot of possible rewards that could be greatly beneficial without creating any gear gaps.

I think that the main problem with those potions is that 5 minutes are just way too short of a duration.. What would be the most common use case for these?

In some PvE cases they don't survive the whole boss duration.
In PvP, they won't even last the whole scenario duration.
